Pumpkin Cinnamon Roll w/ Trader Joes Pizza Dough (Vegan Option) Rich Bitch Cooking BlogIn hopes to further along the presence of fall I attempted my first Pumpkin is Fall recipe. Of course this is awesome. This could easily be made vegan. There’s no eggs in this recipe so just change out the butter or milk with vegan options and you’ll be set. As you can see by the melted icing I made no attempts to wait on the cinnamon rolls to cool, I regret nothing. These were so cheap, that’s something worth noting.

For the rolls:

  1. roll out a package of pizza dough (I used trader joes $1.19)
  2. Mix 2 TB melted butter with
  3. 4 TB pumpkin
  4. 4 TB brown sugar
  5. T BS cinnamon & a pinch of nutmeg / clove
  6. Mix the filling up and spread on dough
  7. Roll dough, cut dough and bake (400 degrees, start to check on them after 20 minutes. You don’t want them to be doughy so they’ll be in there a while )

Frosting:

  1. 1 TB softened butter
  2. 1/2 cup powdered sugar
  3. Add 1 TB milk (maybe add a second TB if needed)
  4. Mix and chill in the fridge
