Vegan Sesame Orange Sweet Potato w/ Broccoli - Low Fat - Rich Bitch Cooking BlogThis! I want to married it. I’m so into this that I just want to do an MC Hammer dance. How can I explain?! This was my first time making this Asian inspired diash as most of my blog posts are firsts. Next time I’m going to make this twice as large. Damn, this is good.

1 med sweet potato (300 grams), 2 ts sesame seed oil, salt, bag of frozen or fresh broccoli (450 grams), 2 TB orange sauce (I used Ying’s brand)

  1. Chop sweet potato into cubes, mix with 2 ts oil and a dash of salt. Bake at 400 degrees for 38 minutes.
  2. During the last 15 minutes of baking steam or boil broccoli. I put frozen broccoli in a skillet with 1/3 cup of water. Once it boiled I put a lid on, lowered the temp allowing it to steam. After 10-15 minutes turn heat off but leave lid on.
  3. Removed sweet potatoes from oven after 38 minutes and let cool for a couple minutes. Put sweet potato in a mixing bowl with 2 TB orange sauce and mix well.
  4. Put broccoli in a bowl, put orange sweet potatoes on top with a sprinkle of sesame seeds. ENJOY
