Vegan Nachos
I can not say enough good and obvious stuff about tortilla chips and salsa. There’s no salsa in the pictures but believe I added it before eating. Nachos are so easy and pretty freaking cheap. Hell yes. Fat and salt for life. ❤

Vegan Chiptle Rice and Bean Salad Bowl - Vegan What I Eat In A Day - Mexican Recipes - Rich Bitch Cooking Blog

I love salads with cilantro lime rice and beans. I’ve made an even better chipotle bowl than this one. It had refried beans and mango salsa but I didn’t have either so that limited what I was able to make today.
