There are hippies out there that say if you’re hungry you should eat a goddamn meal. But there’s million dollar strategy to going the low calorie snack route. I seriously need a large filling meal at the end of the night. How can I afford a large evening meal while working towards my aesthetic goals? The answer is a low calorie, high volume snack to hold me over until the evening. Eat a first meal then a snack then a large dinner. That is my strategy.

I know that doesn’t sound glamours but that’s what I’ve got to bring to the table. Now on to the properly weighed (with a scale) recipes.

All recipes can and should be tweaked to fit your taste & goals.
Don’t mind some of the hemp seed garnish on some of the recipes.
It’s not included in the calories.

Liter of Vegan Iced Coffee – 35 Calories
99% of the people who do intermittent fasting employ some sort of stimulants to curb their appetite so that they can save more calories for later. Now to throw a curve ball, I always use fancy decaf coffee beans so I can’t speak the power of stimulants.

Maybe it’s the power of hydration? A liter of liquid in one sitting is substantial. And don’t believe the myths. As the internet giveth the internet takeths away. And according to the internet (and webMD) “Coffee and tea also count in your tally. Many used to believe that they were dehydrating, but that myth has been debunked. The diuretic effect does not offset hydration

RECIPE: 12 oz fresh hot coffee (5 calories), 1 cup unsweetened vanilla almond milk (30 calories), life time supply of ice, sugar free coffee syrup (option, bought at world market)

  1. Brew coffee
  2. Fill temperature safe mug with 1 cup of almond milk. Add a bunch of ice.
  3. Pour hot coffee over iced almond milk. This will melt the ice so add a ton more ice.
  4. Mix in sugar free syrup. ENJOY

Large Vegan Hummus Wrap – 208 calories
Most hummus is 50-80 calories a serving but trader joes eggplant hummus is only 35 calories per serving. You can find it in the chz section of the store. If you don’t have access to this type of hummus either use less regular hummus or make this low cal hummus recipe. The trick to making this large is LETTUCE.

Lettuce is the ultimate volume food. More room for cookies later. ha ha ha ha

I like bags butter lettuce (aldi!) because it’s soft and won’t tear up flatbread like romaine does.

RECIPE: 1 “fit” flatbread (aldi, 90 calories), 3 oz eggplant hummus (trader joes, 105 calories), couple pickled jalapeno (5 calories), as much butter lettuce as you can fit (8 calories)

  1. Spread hummus on flatbread. Add a couple jalapenos and as much lettuce as possible.
  2. Roll up & ENJOY

Massive Bowl Of Watermelon – 200 Calories
670 grams of watermelon or 1.4 lbs is 200 calories. Well, I guess it really depends on how sweet the watermelon is but for all intents and purposes we’ll go with the internets calculation.

This may be throwing myself under the bus but some fruits seriously do nothing for my satiety. Some fruit I can eat huge a volume and feel like I’ve eaten nothing. I avoid those fruits unless I’m really craving them.

Vegan Oatmeal + Mini-Mountain of Blueberries – 220 Calories

*a week after I posted this I ran out of blueberries and ended up using frozen pineapple. Holy hell! Hail pineapple + oatmeal. Try pineapple instead!!!!!!

I know oatmeal does not work for a lot of people. I actually thought I was that person. Granted I don’t have a long relationship with oatmeal but I figured my oatmeal problem came down to 2 issues.

#1 problem: Oatmeal tastes gross until it has a pound of sugar.
#2 problem: Oatmeal isn’t satiating because all of the sugar has turned it into a flipping dessert.

Here’s my solution: Don’t add sugar. Add blueberries. Lots of them. Frozen ones from Aldi because they’re cheap as fuck. Maybe 12 oz for $2?

I can not vouch that my experience will work for anyone else. But the fiber and carbs keep me solid. If it was sugary sweet it would create problem #2 but this is a humble mix between bland and delicious. As a result it’s my perfect snack when I’m hungry but not craving anything in particular. It doesn’t create cravings, it’s cheap as fuck and takes 2 seconds to makes. Hallelujah

*you can even add a dash of chemical-death-sugar-free-syrup (as mentioned in coffee recipe)
** I usually usually 60 grams of oatmeal instead of 40 gram

RECIPE: 40 grams of dry oatmeal (150 calories), water (follow directions), 140 grams frozen blueberries (70 calories), cinnamon, dash of salt or sugar free syrup (optional)

  1. Mix oatmeal with proper amount of water (I never get it right). Add cinnamon & frozen blueberries on top.
  2. Microwave for 2 minutes. Stir, add more water if needed. Maybe microwave another minute or until berries are warm.
  3. Drizzle sugar free syrup on top. ENJOY

2 Deluxe Vegan Rice Cakes – 230 Calories
I can not say enough good things about single packets of guacamole. 9 times out of 10 I won’t eat a whole avocado in a sitting. My calories just can’t afford it. And it’s even worse with those traditional packets of guacamole. But single packets!!!!!!!!!!!! This is the world I want to live in.

This recipe includes the lower calorie hummus mentioned above but you could use the lower calorie homemade option listed above.

RECIPE: 1 avocado packet (100 calories), 2 salted rice cake (80 calories), 1.4 oz eggplant hummus (50 calories)

  1. Put avocado packet & hummus on rice cake. ENJOY

Big Bowl Strawberries - 10 Vegan Snacks Under 250 Calories - Low Calories, Easy, Fast, Cheap, Healthy Snacks - Rich Bitch Cooking Blog

2 Containers of Strawberries – 224 Calories
Weighing out 2 containers worth of strawberries with the greens and flavorless white insides cut out is 700 grams. 700 grams or 1.5 lbs of strawberries is 224 calories! I love strawberries! When they’re on sale buying 2 containers.

RECIPE: 2 containers of strawberries

  1. Rinse well
  2. Remove the tops
  3. ENJOY

2 Servings of Protes (Nacho) – 240 Calories
Protes are vegan, gluten free, low fat & low carb chips. SAY WHAT?! I first heard of these from another youtubers What I eat in a day video. Dude, she didn’t even show the package but when she said the macros I became a detective. I found their website and used their store locator. Totally into it! 1/2 a bag is 240 calories with 30 grams of protein!!!

RECIPE: 2 ounces of Protes Chips

Simple Vegan Smoothie - 10 Vegan Snacks Under 250 Calories - Low Calories, Easy, Fast, Cheap, Healthy Snacks - Rich Bitch Cooking Blog

Vegan Simple Smoothie – 244 Calories
This is good if you need a simple smoothie to get you through. This isn’t the most mind blowing thing but I’m telling it will do! I used cinnamon in the video because that’s added flavor for no calories. You could use sugar free syrup for sweetness or add cocoa powder for 10 additional calories. Obviously there are ways to make this smoothie epic but let’s keep it simple; banana + unsweetened almond milk.

RECIPE: 2 frozen bananas (240 grams for 214 calories),  1 cup unsweetened almond milk (30 calories)

  1. Blend everything together. Add water if it’s too thick to blend & you don’t have a fancy blender. ENJOY

Easy Vegan Veggie Soup - 10 Vegan Snacks Under 250 Calories - Low Calories, Easy, Fast, Cheap, Healthy Snacks - Rich Bitch Cooking Blog

Easy Vegan Veggie Soup – 219 Calories
If you watch the video you can see this starts off as a super simple veggie fajita bowl. Grilled veggies and bell pepper! All the with help of our amazing thrift store foreman grill. I’d been wanting to turn one of my grilled bowls into a soup so that’s what you see here.

Now there’s a few simple things I would do differently next time. I’d use a little less veggies to save some calories for a dash of soy sauce, agave nectar & a pinch of finely grated ginger! Dude, yes. Like a bowl of Asian soup filled with veggies. Just adding the broth like you see in the video was a bit too bland.

RECIPE: 7 oz mushrooms (44 calories), 200 grams zucchini (34 calories), 100 grams carrots (40 calories), 60 grams onions (24 calories), 64 grams bell peppers (13 calories), spray of oil (50 calories?), broth (14 calories), salt

  1. Chopped up all the veggies
  2. Cook onions & bell peppers first with oil + salt
  3. Add zucchini & carrots
  4. Add mushrooms
  5. Once veggies are soft either enjoy or make into soup
  6. For soup: add vegan chicken broth to veggies. Maybe a dash of soy sauce, ginger and/or agave! ENJOY

Vegan Cocoa Banana Nice Cream – 234 Calories
Of course banana ice cream is gonna make the list! This is my favorite before bed snack. After dinner I try to keep 250 calories for some sort of banana nice cream situation. Nice cream with cocoa or cinnamon is great when you’re down to your last few calories. So filling!

RECIPE: 2 frozen bananas (240 grams, 214 calories), dash of cold water, 1 TB cocoa powder (10 calories depending of the brand)

  1. Blend everything in a food processor or a fancy blender. ENJOY

  1. As I head into winter and everything ‘food’ starts to call to me in a BIG way, some of these snacks might go halfway to keeping me on track. I tend to the savoury side of the path so glad to see you have a good balance between sweet and savoury. So many vegan blogs tend to lean towards the sweet side. Cheers for the excellent share.

    1. Thanks. Yeah, whenever I eat anything savory I immediately crave sweet or vise versa. All day, everyday.

      Ultimately I’m not very creative when it comes to sweets. Smoothie, nice cream or some store bought cookies is 99% of my sweet choices when I’m not trying to dazzle you guys on the blog.

      Definitely more creative or inspired to step in the kitchen when it comes to savory.

      If you see a dessert recipe on here just know that it came about with a pound of anxiety. I’ve had many fails in that department. ha ha ha

      1. It’s rapidly approaching winter here in Tasmania and that means one thing on Serendipity Farm, the power of Brunhilda our big 4 oven wood burning stove. So far this year she has been behaving well. We must be doing something right as she hasn’t burned anything yet but give her time. Last year just about every cake I made had to have the bottom cut off it and I tend to only make cake for other people so it was stress to the nth degree. I had to use up some black bananas the other day and made a chocolate banana cake with peanut butter and chocolate icing but Steve hated it so the chooks got it (I am trying to lose a bit of weight) and I also made a peanut butter, banana and date blondie recipe that turned out to be amazingly good and he is actually eating that. Dessert recipes make me twitch! I am much more comfortable with savoury recipes.
